  • 1 kg wheat flour (type 700, depending on the region)
  • 550 g lukewarm water
  • 150 g fine granulated sugar
  • 100 g soft butter
  • 10 g salt
  • 20 g fresh yeast (yeast)
  • 2 egg yolks
  • Grated zest of one organic orange
  • To top it off: an egg to brush & rye flour for dusting

  • In a large bowl, mix the wheat flour with the warm water, sugar, butter cubes, salt, fresh yeast, egg yolks and grated orange zest.
  • Use a food processor to mix the ingredients at low speed for two minutes before blending at a higher setting for a further eight minutes until smooth.
  • Cover the dough with a clean cloth and leave it to rest at room temperature for about an hour so that it can rise.
  • Knead the dough briefly and then chill it for at least twelve hours, preferably overnight. This resting phase not only gives the dough the right consistency, but also a rich aroma.

Shaping and baking the Easter plait:

  • After the resting time, divide the dough into two halves, dust them lightly with flour and leave them to rest for another half an hour.
    Divide each half into three equal pieces and roll them into strands.
  • On a lightly floured work surface, braid the strands into a loose plait. You can braid two plaits for a traditional Tyrolean Easter plait.
  • Carefully brush the plait with a beaten egg to give it a nice golden brown crust.
  • Leave the plait to rest for about ten minutes after coating before baking it in a preheated oven at 180 °C (fan oven 160 °C) for about 35 minutes until it is perfectly golden brown and baked through.
